Les Bouchons Lyonnais : Can you tell us the names of your chefs and the career paths they followed?
David Cano : I’m both the chef and the owner, and I came to Les Culottes Longues with several years’ experience.
LBL : Why did you decide to open a bouchon-style restaurant (generation, family, etc.)?
DC : Bouchons serve genuine Lyon-style cooking, traditional home-made dishes using only fresh produce.
LBL : Does your bouchon have any specialities or particular culinary style?
DC : We serve game dishes that are specific to Lyon’s gastronomic tradition.
LBL : What dish would you choose to symbolise bouchon cuisine?
DC : Offal is fairly typical but there’s also cheese, praline tart, and all sorts of pork meats and dishes.
