    Le Laurencin first opened its doors in 1991, in a typical Lyon house built in 1528 in a district now known as Vieux Lyon, and the beating heart of the city. The restaurant has an old-fashioned air, with the original stone walls, old cooking utensils on the shelves, and of course the famous Punch and Judy puppet on the wall. Owner Jean-François Galganim, whose mother used to prepare typical Lyon recipes for friends and family, always knew he would own a bouchon one day. Passionate about the city and its traditions, he has an inexhaustible supply of anecdotes and eulogies on the subject. The series of young chefs who have worked at the restaurant have all shared a common love of a job well done and respect for their raw materials, and this is clear from the food they offer: salade lyonnaise, cervelle des canuts (a dip made with quark) and profiteroles all come in more than generous portions!
