The young owner-chef Olivier Bianchi took over at L’Acteur in 2011 from Fabien Delhorme, who had been in charge since 1991. Since then he has ceaselessly defended his territory with both typical food and local wines from the Beaujolais region. The bouchon is just opposite the stage door at the Théâtre des Célestins, and strives to promote traditional Lyon cuisine whilst putting the accent on fresh foods and home cooking. You will find both calf’s head with fresh herb vinaigrette and fresh fish meunière (pan-fried with a butter sauce) that was delivered that very morning from Lyon’s chief market. In summer, you will find the chef at Saint Antoine market seeking out local strawberries and cherries for his tarts and clafoutis.
