Aux Trois Cochons is just a stone’s throw from Place Bellecour, and its decor is all about pigs – knick-knacks, figurines, pictures: there are pigs everywhere, offering a warm, friendly welcome in this traditional bouchon with its typical red and white checked tablecloths. The owners take real pride in their heritage: Stéphanie Midroit runs the establishment with her husband and her parents, and the family is keen to maintain the historic and gastronomic tradition for which their home town is famous. The chef here tempts his customers with pork prepared in a wide variety of different ways – black pudding burger, spare ribs, or hot saucisson (cured sausage usually eaten cold) - here they use everything but the oink! And let’s not forget the great classic dishes of Lyon cuisine: andouillette (chitterling sausage), quenelles and tablier de sapeur (literally – ‘fireman’s apron’), a dish of breaded tripe.
