    Taken over in 2002 by Alain Ducasse, Aux Lyonnais is a Parisian bistro dedicated to the regional cuisine from Lyon.

    This traditional bistro created in 1890 cultivates a warm and relaxed atmosphere. “Without challenging the traditional flavour combinations, we offer a fresh take on Lyon cuisine, modernizing it slightly to make it lighter and even tastier,” explains the chef, Yann Mastantuono. He uses rigorous methods to reduce and bind together the juices to release the very best flavors from local, personally selected produces. Like Alain Ducasse himself, his aim is to put local produce and the specialties of Lyon’s cuisine back on the map. This bistro has kept its red wooden frontage and the sign “Maison Lyonnaise”.  Wooden paneling and floral patterned mouldings, retro light fixtures and metro style tiles decorate the walls and ceilings. Everywhere there are beveled mirrors reflecting the two-storey spectacle where busy waiters deftly move between the tables, carrying copper sauté pans or orange cast-iron dishes.
